Vaidhi Tamarind Rice
Ingredients:

Cooked Rice – 200 g
-
Oil – 2 tsp
-
Tamarind Powder – 50 g
-
Salt – as needed
Preparation Steps:
-
Cook the rice and allow it to cool completely.
-
Add 2 teaspoons of oil to the rice and mix gently.
-
Add 50 g of Vaidhis Tamarind Powder and mix evenly.
-
Add salt if needed.
-
Serve with papad or pickle for a perfect tangy meal!
Vaidhi Sambar

Ingredients:

Toor Dhal – 100 g
-
Water – 250 ml
-
Oil – 1 tsp
-
Mustard Seeds – ½ tsp
-
Dried Red Chilies – 2
-
Curry Leaves – 15–20
-
Asafoetida – ½ tsp
-
Onion – 1 (chopped)
-
Tomato – 2 (chopped)
-
Mixed Vegetables – as desired
-
Turmeric Powder – ½ tsp
-
Vaidhis Sambar Powder – 2 tsp
-
Tamarind – lemon-sized ball (soaked in water)
-
Salt – 1 tsp or to taste
-
Coriander Leaves – for garnish
Preparation Steps:
-
Cook the toor dhal with 250 ml of water for 3 whistles in a cooker.
-
In a separate vessel, heat 1 tsp of oil.
-
Add mustard seeds, red chilies, curry leaves, and asafoetida.
-
Once they splutter, add onion and tomato. Sauté until soft.
-
Add chopped vegetables, turmeric powder, and Vaidhis Sambar Powder. Mix well.
-
Mash the boiled toor dhal and add it to the vessel.
-
Pour in the tamarind water, mix well, and add salt to taste.
-
Close the cooker and cook again for 3 whistles.
-
Garnish with fresh coriander leaves and serve hot with rice or idly.
Vaidhi Rasam

Ingredients:

Tomato – 1
-
Tamarind – lemon-sized ball (soaked in 250 ml water)
-
Salt – 1 tsp or as needed
-
Oil – 1 tsp
-
Mustard Seeds – ½ tsp
-
Dried Red Chilies – 2
-
Curry Leaves – 10–15
-
Garlic – 3 cloves (smashed)
-
Asafoetida – ½ tsp
-
Vaidhis Rasam Powder – 2 tsp
Preparation Steps:
-
In a vessel, add 1 tomato, lemon-sized tamarind, salt, and 250 ml of water.
-
Boil the mixture well and smash it once the tomato softens.
-
In another pan, heat 1 tsp oil.
-
Add mustard seeds, red chilies, curry leaves, and smashed garlic.
-
Sauté until the garlic turns aromatic. Add asafoetida and fry for a few seconds.
-
Pour in the smashed tamarind-tomato mixture.
-
Add 2 tsp of Vaidhis Rasam Powder and bring it to a gentle boil (kothikkum varai).
-
Turn off the stove and serve hot, garnished with fresh coriander.
Vaidhi Instant Rasam

Ingredients:

Water – 200 ml
-
Tomato – 1
-
Green Chilli – 1
-
Coriander Leaves – a few (chopped)
-
Vaidhis Rasam Powder – 2 tsp
-
Salt – add only if needed
-
(already included in the masala)
Preparation Steps:
-
In a bowl, add 200 ml water, 1 tomato, 1 green chilli, and coriander leaves.
-
Gently smash the tomato and mix well.
-
Pour the mixture into a vessel and place it on the stove.
-
When it starts to heat, add 2 tsp of Vaidhis Rasam Powder.
-
Allow it to boil until it starts to froth (kothikkum varai).
-
Turn off the stove and serve hot with rice or enjoy as a soup
Vaidhi 65 Pokoda

Ingredients:

Chicken or Cauliflower – ½ kg (cleaned)
-
Ginger Garlic Paste – 1 tbsp
-
Vaidhis 65 Masala – 100 g
-
Salt – add only if needed (already present in the masala)
-
Oil – for deep frying
Preparation Steps:
-
In a bowl, add the cleaned chicken or cauliflower pieces.
-
Mix in 1 tablespoon of ginger garlic paste and 100 g of Vaidhis 65 Masala.
-
Add salt only if needed, as the masala already contains salt.
-
Mix everything well and set aside for 5–10 minutes to marinate.
-
Heat oil in a deep vessel on the stove.
-
Once the oil is hot, fry the chicken or cauliflower pieces one by one until they turn crisp and golden brown.
-
Serve hot with onion slices and lemon for a perfect snack or side dish!
